About: In the SUPER Beef project, we are conducting a crossover controlled feeding trial with lactating women to better understand the relationship between food consumption, breastmilk profile, and maternal-child outcomes. The study will involve two diet conditions prepared by our team, one featuring beef and one featuring plant-based beef (such as Impossible Beef). Participants will collect breastmilk samples and wear continuous glucose monitors while maintaining records of their food intake, satiety, mood, and stress. This study aims to provide valuable insights into the impact of diet on breastmilk and maternal-child health outcomes.
Your work as a research assistant will play an important role in making this research possible. The role of the SUPER Beef Research Assistant is to assist graduate students in preparing and conducting study activities such as preparing food pack-outs, assisting with study visits, completing data entry, and preparing for sample analysis. Research Assistant activities will take place in person at the Dell Pediatric Research Institute (DPRI) – 1400 Barbara Jordan Blvd, Austin, TX 78723.
Position Details:
- Position Start Date: January 1st – Jan 16th, 2024 (must complete an in-person training prior to start date)
- Position End Date: End of Spring 2024 semester, with potential to continue into Summer 2024

- Spring 2024 Commitment:
- Option 1: Volunteer — at least 3 hours/week. (1, 3-hour shift)
- Option 2: NTR 355 Course Credit (Nutrition Majors only) — 9 hours/weekly (at least 2, 3-hour shifts)
Requirements:
- Available for weekly 3-hour shift(s) at Dell Pediatric Research Institute.
- Attend an in-person training prior to start date (details in Qualtrics Application)
- Reliable and able to commit to the required hours
- Strong attention to detail and organizational skills
- Aptitude for problem-solving and critical thinking
- Excellent communication and interpersonal skills
- Ability to work independently as well as collaboratively with other members of the research team
- Proficient in Microsoft Word and Excel
Responsibilities:
- Prepare and assemble food pack-outs
- Assist graduate students with conducting study visits
- Complete data entry in REDCap
- Prepare samples for analysis (labeling, pipetting if interested in lab work)
- Other duties as assigned
