About Us

Our Home

The Food Security Lab was established in August of 2023 by Dr. Natalie Poulos, Assistant Professor and Registered Dietitian. The Food Security Lab is located the Department of Nutritional Sciences in the School of Human Ecology (SoHE) and College of Natural Sciences at the University of Texas in Austin.

Our Work

The lab was created to provide excellence in food security research. Our work will provide the foundation and direction for improvements in community-based food programs, food security interventions, and policy recommendations to improve food access to nutritious, culturally relevant foods for communities. Research in the Food Security Lab intentionally seeks to improve the food and nutrition security of individuals and communities known to be at high risk for food security, including families with young children, single parent households, ethnic minority populations, emerging and young adults, and seniors.

Our Future

Our work with food policy, healthcare systems, Food is Medicine, and social and environmental factors are constantly being evaluated to develop creative and novel developments to communities and organizations as a tactic to eradicate food and nutrition security, as well as hunger, across the country. Over overarching goal is to uncover the fixable solutions to food insecurity through continued collaboration and determination, in order to advance human health and equity for all persons.
