Eunice Kim – Graduated Spring 2025
Integrated Coordinated Program in Dietetics

Eunice completed UT Austin’s Integrated Coordinated Program in Dietetics (ICPD) Student in 2025. During this time, she served as a Research Assistant in the lab, eventually completing her thesis on exploring the relationship between diet quality, local fish consumption, fishing practices, and food security. Since graduating, Eunice has accepted a position at Baylor Scott & White in Fort Worth as a Dietitian I PRN.

Hannah Price, MS
Senior Research Coordinator

Hannah has a Master’s degree in Nutritional Sciences from The University of Texas at Austin and a Bachelor’s degree in Animal Science from the University of Georgia. She joined the Food Security Lab in June 2024 and is supporting research across all projects including the Seafood and Nutrition Security Project, evaluation of a Food FARMacy Program in partnership with the Central Texas Food Bank, multi-site study on College Basics Needs, and qualitative analysis of community engagement data collected as part of the Austin/Travis County Food Plan development. In August 2026, Hannah started a full time position as a Doctoral student at Colorado State University.

Grace Phelps – Graduated Spring 2026
Integrated Coordinated Program in Dietetics

Grace has a Bachelor’s and Master’s degree in Nutritional Sciences from the University of Texas at Austin and a Bachelor’s degree in Psychology from Texas A&M University. She joined the Food Security Lab in Fall 2025 as a Master’s student. Grace is supporting research on the Seafood and Nutrition Security Project. She is interested in how beliefs about seafood influence dietary patterns of coastal residents.

Natalie Yook – Graduated Spring 2026
Integrated Coordinated Program in Dietetics

Natalie has a Bachelor’s and Master’s degree in Nutritional Sciences from the University of Texas at Austin. Natalie joined the Food Security Lab as a graduate student in Fall 2025 and is supporting initiatives with the College Basic Needs Project. Her research focused on food insecurity and academic outcomes among college students.
