Lab Alumni Eunice Kim – Graduated 2025Eunice completed UT Austin’s Integrated Coordinated Program in Dietetics (ICPD) Student in 2025. During this time, she served as a Research Assistant in the lab, eventually completing her thesis on exploring the relationship between diet quality, local fish consumption, fishing practices, and food security. Since graduating, Eunice has accepted a position at Baylor Scott & White in Fort Worth as a Dietitian I PRN.
