Principal Investigator

Natalie Poulos, PhD, RD
Assistant Professor

Dr. Natalie Poulos is a Behavioral Scientist and Dietitian. She received her PhD in Health Behavior, Master of Science in Health Promotion and Health Behavior, and Bachelor of Science in Nutrition from The University of Texas at Austin. She completed postdoctoral training in family and child health at The University of Texas at Tyler, Health Science Center and The University of Texas System Administration, Office of Population Health under the supervision of Dr. Dorothy Mandell. Dr. Poulos’ research focuses broadly on food security and early family health through qualitative and community engaged methods. She has a strong interest in building connections and partnership across existing community, state, and federal programs and policies to better support families in need of access to nutritious foods and social services.

Dr. Poulos is also currently serving as a Board Member on the City of Austin & Travis County Food Policy Board, as well as the Central Texas Food Bank Data Dashboard Advisory Committee.

She also volunteers her time as a Garden and Grounds Lead at her kid’s elementary school, Girl Scout Co-Leader, serves as an Austin Park Steward for Gullett School Park, and volunteers with the Austin Animal Center and Hound Rescue.
