Research Assistants

Margot Heltzel
Nutrition Undergraduate Student, Research Assistant

Margot has been volunteering in the Food Security Lab since Fall 2024. She has supported projects on seafood and nutrition security among coastal Texans, understanding basic needs and food security among college students, and food security among military families

Sofia Flores
Nutrition Undergraduate Student, Research Assistant

Sofia joined the Food Security Lab as a volunteer in Spring 2025. Since then, she’s aided in the Central Texas Mobile Farmacy evaluation and supported studies that assess the food and nutritional needs of both college students and Texan coastal communities.  

Grace Phelps
Nutrition Graduate Student, ICPD, Research Assistant

Grace has a Bachelor’s degree in Nutrition from the University of Texas at Austin and a Bachelor’s degree in Psychology from Texas A&M University. She is a part of the 2026 cohort of the Integrated Coordinated Program in Dietetics (ICPD) at UT in pursuit of obtaining her license as a Registered Dietitian. She joined the Food Security Lab in Fall 2025 as a Master’s student. Grace is supporting research on the Seafood and Nutrition Security Project. 

Natalie Yook
Nutrition Graduate Student, ICPD, Research Assistant

Natalie has a Bachelor’s degree in Nutrition from the University of Texas at Austin and is pursuing a Master’s degree in Nutritional Sciences with the Integrated Coordinated Program in Dietetics (ICPD). Natalie joined the Food Security Lab as a graduate student in Fall 2025 and is supporting initiatives with the College Basic Needs Project.
